1. Soak 8-12 bamboo skewers in a suitably-shaped container (I use an old Tupperware celery keeper) with water to cover, using a plate to weight them down.
2. Blend onion, garlic, 2 pieces of pineapple, soy sauce, lemon rind,
spices and sugar in food processor until smooth. Add to the pork and
coat well.
3. Satay Sauce: mix all sauce ingredients in a small saucepan until smooth
and hot. Cover and keep warm on the edge of the grill.
4. Thread pork onto bamboo skewers alternately with pineapple chunks. Cook the pork
and pineapple skewers on a medium-hot grill for 10-12 minutes, turning
occasionally, until golden brown and the pork is thoroughly
cooked. Serve with the Satay sauce.
