Macaroni and Cheese

4 c whole milk
1/2 c butter
1/2 c flour
1 whole clove
1 bay leaf
1 white onion
2 c shredded sharp white cheddar
white pepper
1/2 tsp paprika
1 tbs dried mustard
2 tsp dry sherry
1 lb macaroni
1 c panko
1. Preheat oven to 375
2. Butter a shallow 2-quart baking dish
3. Cook noodles al dente
4. Pin bay leaf to onion and place in a medium saucepan with milk.  Over a medium heat, warm milk until bubbles form.
5. Make blonde roux from butter and flour
6. After onion has been steeping for 30 minutes, remove and whisk in roux. Add 1 cup of cheese.
7. Add salt, pepper, nutmeg, paprika, mustard, and sherry and stir until blended.
8. Add macaroni to prepared dish.  Spoon sauce over and scatter remaining 1 cup of cheese over.  Top with panko.  Bake for 35 - 40 minutes.
