Chocolate Cream Pie

Classic chocolate filling pie on a ready made frozen pie crust, topped by homemade whipped cream.
Ingredients
PIE CRUST
1 10 inch Frozen Pie Crust
CHOCOLATE FILLING
1 Cup Sugar
5 TBS Cornstarch
4 TBS Cocoa
1 pinch salt
3 Cups Whole Milk
2 each Eggs
1 tsp vanilla
3 TBS Butter
 
Directions
1. PIE CRUST:
Bake Frozen Pie Crust following directions for a filled pie.
Usually this involves:
Thaw crust for about 15 minutes
Poke holes to prevent bubbling
Bake at 400F for about 11 minutes or until golden brown
Set aside to cool
2. CHOCOLATE FILLING
In a saucepan:
Mix sugar, cornstarch, cocoa, and salt
3. Beat eggs and add to saucepan
4. Add the milk to saucepan, stir ingredients until smooth
5. Cook over medium to medium high heat until it thickens.
The thickening will occur almost instantaneously when the cornstarch reaches proper heat, so keep an eye on it.
Stir constantly to avoid scorching the milk.
Remove from heat
6. Stir in the butter and vanilla.
7. Allow to cool for about 5 minutes and then pour into pie crust until almost even with crust edges. Place in fridge to chill, about 1 to 1 1/2 hours.
8. WHIPPED CREAM
Place a metal mixing bowl and whisk into the freezer for about 10 to 15 minutes. This will help with thickening the whipped cream.
9. Add sugar and heavy whipping cream to the mixing bowl and run mixer on medium high until you get stiff peaks, about 8-10 minutes.
10. Spread whipped cream on top of pie and refrigerate.
