Pincho de Carne Adobada (marinated meat pinchos)

1 teaspoon paprika
1 clove garlic
1 pinch oregano
21 ounces tender boneless lamb or beef fillets
olive oil
Salt to taste
1. Mix paprika, garlic, oregano, and some water in a large Ziploc baggie.
2. Cut meat into bite-size cubes.
3. Add meat to the bag and stir, adding more water if needed, until the meat is completely covered.
4. Allow this to marinate in the refrigerator for up to 4 hours.
5. Drain the meat thoroughly and allow it to come to room temperature.
6. Thread the meat onto 6 skewers.
7. Heat a skillet, frying pan, or griddle on high heat until very hot.
8. Coat the pan lightly with olive oil.
9. Add the skewers and cook, turning occasionally, until the meet is cooked to taste.
10. Remove skewers from the pan and sprinkle with salt.
