Slow Cooker Corned Beef and Vegetables

4 carrots
10 baby red potatoes
1 onion
4 cups water
1 4 pound corned beef brisket with spice packet
6 ounces Guinness Extra Stout
1/2 head cabbage
1. Peel carrots and cut into matchstick pieces.
2. Cut potatoes into quarters.
3. Peel the onion and chop it into bite-size pieces.
4. Put the carrots, potatoes, and onion into the slow cooker.
5. Pour in water.
6. Set brisket on top of vegetables.
7. Pour the stout over the meat.
8. Sprinkle the spice packet onto the meat.
9. Cook on low for 7 hours.
10. Coarsely chop cabbage and add to pot.
11. Cook for another hour.
Makes 8 servings.

For crispier carrots, add them after 4 hours of cooking rather than at the beginning.
