Cream of Fresh Tomato Soup

3 T olive oil
1 1/2 cups chopped red onions (about 2 onions)
2 carrots, unpeeled & chopped
1 T minced garlic (3 cloves)
4 lbs tomatoes (fresh & chopped, ~5)
1 1/2 tsp sugar
1 T tomato paste
1/4 cup fresh basil leaves, chopped
3 cups chicken stock
1 T kosher salt
2 T black pepper
3/4 cup heavy cream
croutons, for garnish
1. Heat olive oil over medium heat.  Add onions and carrots and saute about 10 minutes or until very tender.  Add garlic and cook about 1 minute.  
2. Add tomatoes, sugar, tomato paste, basil, chicken stock, salt and pepper and stir well.  Bring soup to a boil, then lower heat and simmer, uncovered, for about 30-40 minutes.
3. Add cream and process through a food mill (discarding any dry pulp that's left).  Reheat the soup over low heat until just hot & serve with croutons, if desired.
