Swiss Vegetable Casserole

Brizek family Thanksgiving tradition.
3 (12oz bags) frozen broccoli, carrots & cauliflower blend, thawed & drained
2 cans condensed cream of mushroom soup
8 oz finely shredded Swiss cheese
2/3 cup sour cream
1/2 tsp pepper
6 oz container french fried onions (2 cups)
1. Preheat oven to 350 degrees.  In a large bowl, combine the cream of mushroom soup, half of the cheese (4 oz), sour cream, pepper and half the onions (1 cup).  Gently stir in the vegetables.
2. Pour into a 3 quart casserole dish.  Bake, covered, for 40 minutes.  Remove from the oven and top with the remaining cheese and onions.  Return to the oven, uncovered for 10 more minutes until cheese is melted.
