Vanilla Buttermilk Cupcakes

Fluffy, buttery, vanilla cupcakes; great with your favorite frosting.
3 cups flour
2.5 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 sticks unsalted butter, softened
2 cups sugar
4 large eggs
2 egg yolks
3 tsp vanilla extract
1 cup buttermilk
1. Pre-heat the oven to 350ยบ.  Fit 2 12-cup muffin tins with cupcake liners.  Whisk together the flour, baking powder, baking soda and salt.
2. Beat butter and sugar until fluffy.  One by one, mix in the eggs, the egg yolks, and vanilla.  Add the flour mixture alternately with the buttermilk, mixing until smooth.  Spoon out the batter into the cupcake liners. 
3. Bake for about 25 minutes.  Cool.  Top with your favorite frosting.  Makes 24 cupcakes.
