Beef Fajitas

Makes 12 servings (a lot!).  Very easy and delicious recipe for a crowd!
1 1/2 lbs beef flank steak
1 cup chopped onion
1 green sweet pepper, sliced
1 jalapeno pepper, chopped
1 Tbsp cilantro
2 cloves garlic, minced
1 tsp chili powder
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp salt
(1) 8 oz can chopped tomatoes
12 flour tortillas
Toppings (optional)
sour cream
shredded cheddar cheese
1. Cut flank steak into 6 portions.
2. Combine meat, onion, green sweet pepper, jalapeno pepper, cilantro, garlic, chili powder, cumin, coriander and salt in crockpot. Add tomatoes.
3. Cover and cook on low for 8 - 10 hours or on high 4 - 5 hours. Remove meat from slow cooker and shred. Return meat to slow cooker. Stir.
4. To serve fajitas, spread meat mixture into flour tortillas and add toppings if desired. Roll up tortillas.
