6 oz elbow macaroni cup butter tsp salt tsp pepper cup plain flour 1 cup milk 8 oz sharp American cheese or Velveeta
Cook macaroni. Melt the butter in a saucepan and blend in flour, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat and add milk. Heat to boiling stirring constantly. Continue to cook, stirring all the while, for one minute. Remove from heat and stir in cheese. Keep stirring until the cheese is melted. Stir the cheese into the macaroni and pour the whole mess into a casserole dish. Sprinkle grated cheese on top (anything, cheddar, swiss...whatever you like.) Bake at 375 for 30 minutes.
When this is too much work, I just make a box of Mac and Cheese, but add extra grated cheeses and some cream...whatever cheese I have on hand or a combination of whatever I have on hand. I don't know how much extra cheese I put in because I don't measure it, but it's a lot because we all love cheese.
