Moosewood Spinach Lasagna

Ingredients
Bechamel Sauce
6 cups Milk
1 cup Butter
1 cup Flour
1/4 tsp Nutmeg
Salt and Pepper to Taste
Lasagna
1/4 cup Butter
2 Garlic Cloves, minced
2 cups Chopped Onion
2 lbs Spinach, chopped
3/4 cup Fresh Chopped Parsley
1 lb Ricotta Cheese
2 Eggs
2 cups Parmesean Cheese
1 pkg Noodles
 
Directions
1. Heat Milk until very warm but not boiling.
2. In other pan, melt butter on medium, whisk flour into butter and cook 3 to 4 minutes, stirring constantly.
3. Gradually add Milk and whisk until thick.  Add Nutmeg, pepper, salt.
4. Saute garlic and onions in butter.  When onions are translucent add spinach and 1/2 cup parsley.  When spinach is wilted remove from heat and set aside.
5. Mix together remaining parsley, ricotta, eggs and 2/3 cup parmesan 
6. Cook noodles.
7. Oil 13x9 pan and layer ingredients as follows:

1.  1.5 cups Bechamel sauce
2.  1/3 noodles
3.  1/2 spinach
4.  Mozzarella
5.  1.5 cups Bechamel sauce
6.  1/3 noodles
7.  all ricotta mixture
8.  rest of spinach
9. 1.5 cups Bechamel sauce
10. rest of noodles
11.  rest of Bechamel
12. sprinkle parmesan
8. Bake covered at 350 for 45 minutes, uncovered for 10 to 15
