Roasted Butternut Squash

Who thought squash could taste so good!
3 lbs. Butternut Squash, peeled & chopped in chunks
3 Tbs. Olive Oil
1 Teaspoon Cumin
1 teaspoon Cinnamon
1 pinch Cayenne Pepper
2 Tbs. Butter
1 Tbs. Honey
1 teaspoon Lemon
1 teaspoon Thyme
1/4 taespoon Salt
1. Wisk together Olive oil, cumin, cinnamon, and cayenne pepper in large bowl. Toss in chunks of squash until well coated.
2. Roast in 400* oven for 35-40 minutes until nice and browned, turning over about halfway through cooking time.
3. In small microwaveable bowl, melt the butter. Add the honey, lemon, thyme & salt. Pour over cooked squash & serve!
Be very careful peeling and cutting a fresh squash! They need to be cut in half to remove all those nasty seeds as well. Better yet, buy the cut-up squash at Wegman's!
