Eggs Florentine Style (Princess Diana's)

Ingredients
2 tsp Wine Vinegar
4 medium Eggs
2 ounces Butter
1 lb Baby Spinach Leaves
Salt and Pepper
1/2 tsp Nutmeg
4 Tbls Sour Cream
4 Tbls Parmesan (grated)
4 Plum Tomatoes (diced)
 
Directions
1. Half fill a frying pan with water and add vinegar.
2. Bring to a boil, reduce to simmer.
3. Break the eggs into the pan keeping them apart.
4. Cook gently for 5 minutes until just set or to your liking.
5. Remove from pan and keep warm.
6. Meanwhile: melt butter in a large frying pan and strir fry spinach for 2 to 3 minutes. until just wilted.

7. Remove from heat and season with nutmeg.
8. Drain to remove liquid.
9. Preheat grill to a medium to hot setting.
10. Place spinach in the bottom of a shallow heat proof dish.

11. Arrange eggs on top of spinach.
12. Top each egg with a spoonful of sour cream and cheese.

13. Bake 350  2- 3 minutes until lightly golden.
14. Transfer eggs and spinach to wamed plates.
15. Season and serve with chopped tomatoes spooned around plate.
