Perfect Matza Balls

Ingredients
2 slightly beaten Eggs
2 Tbls Oil or Chicken Fat
2 Tbls Chicken Stock or Water
1/2 Cup Matzah Meal
1 tsp Salt and pepper
 
Directions
1. Beat eggs slightly with a fork
2. Add other ingredients, except Matzah Meal.
3. Add Matzah Meal gradually until thick.
4. Stir, Refrigerate for 20 minutes in a covered bowl.
5. Wet hands and form into balls.
6. Drop into bubbling chicken soup 
7. Cook for 30 minutes
 
Notes:
Yields 4 balls per each 1/4 cup of matzah meal
