Black-Eyed Pea Dip

Ingredients
2 c black-eyed peas, cooked
1 small sweet onion, chopped
3 slices bacon, chopped
1 can diced tomatoes
1/2 c sharp cheddar, grated
salt and pepper to taste
 
Directions
1. Saute' onion and bacon until onion is tender and bacon is cooked.
2. Mash peas to break skins, keep them chunky.
3. Combine all ingredients into a a saucepan or skillet and cook until cheese is melted and dip is heated through.
4. Season with salt and pepper.
 
Notes:

add a bit of frozen greens to make a yummy New Year's Day dip.

Sometimes I use much more bacon and cheese :)
