Burgers - Simple tasty ones!

4 quality pork sausages
500 kg beef mince
1 finely chopped onion
chopped parsley
50 g grated parmesan
50 g fresh breadcrumbs
1 egg, beaten with a fork
oil for frying
salt & pepper to taste
thyme/oregano/marjoram to your taste
1. Squeeze the sausage meat out of the skins in to a large bowl.  Add the mince, ionion, parsley, parmesan, breadcrumbs, beaten egg, herbs and seasoning.  Use wet hands to mix together really well, squeezing and mashing the mince together.
2. Roll into small tennis ball-sized balls and flatten into patties.  Place in frying pan , drizzle with a little oil and fry on a lower than medium heat to your liking.
