Juicy Duck Breast

Fantastic & impressive - Mike's recipe. Buy one breast per person if small or one between two if large (breasts, not people!)

1 duck breast per person, skin on
2 tbsp 5 spice powder
4 tbsp honey
2 tbsp soy sauce
1/2 cup or 1/4 pint orange juice or freshly squeezed
For the dips:
hoi sin
fish sauce
brown sugar
lime juice
red chilli
sweet chilli sauce
soy sauce
fresh coriander, chopped roughly
spring onions, artistically chopped!
1. Make the marinade by mixing all of the ingredients together apart from the duck.
Lay the breasts skin side up and score them criss-cross.  Pour the marinade over and leave them overnight, turning occasionally.
2. Fry skin side down in a tiny amount of oil in a VERY hot pan (they will smoke) for about 5 minutes until the skin is crispy and blackened  Transfer the breasts to the oven for 15 - 20 minutes.  Remove from the oven and leave to sit 15 minutes.  Slice them  across at an angle - about finger's width.  Serve on a bed of salad drizzled with soy sauce.
3. For the dips:
Hoi sin sauce mixed with equal part water;
Fish sauce with brown sugar, lime juice and chopped chilli to taste;
Sweet chilli sauce;
Soy sauce with fresh coriander and spring onions.
