Lentils Nubia's Way

Simple. Delicious. Healthy. Cheap. Nutricious.
Ingredients
250 g green lentils
1 big onion
2 spring onions
1 carrot
1 big leek
parsley
coriander
mint
5/6 potatoes
3 bell peppers - red/yellow/orange
cumin powder
chicken stock
1 cup milk
knob butter
salt & pepper
 
Directions
1. Soak the lentils in water for a couple of hours.  Cut all the other ingredients into small pieces.
2. Begin by  boiling the lentils, carrot and potatoes.  Meanwhile, fry the rest of the ingredients, except the milk and the butter.  Add the fried ingredients to the drained lentils in the saucepan, along with the milk.  Before serving, add the knob of butter.
