Mediterranean Vegetable & Haloumi Bruschetta

Delicious and attractive, ideal for lunch with friends
Ingredients
olive oil
haloumi - sliced
tomatoes - sliced
aubergine - sliced
basil
capers
baguette or ciabatta sliced at an angle - not too thick
flour for dusting
 
Directions
1. Heat the oven.  Slice the bread, brush with oil and put in the hot oven for about 5 minutes.
2. Grill the slices of aubergine dry in a very hot pan.
3. Coat the haloumi slices in flour and cook in the heated grill pan.  The flour should prevent it sticking.
4. Stack as follows:

salt & pepper
drizzle of olive oil
capers
basil
tomato
haloumi
aubergine
bread
