Pancakes

Amma's recipe - delicious and never fails.
Ingredients
6 oz plain flour
pinch salt
1 egg
1/2 pint milk
 
Directions
1. Sift flour and salt into a bowl.  Make a well, plop the egg into it and gradually whisk the milk in bit by bit until smooth.  Chill in the fridge for half an hour.
2. Heat a large frying pan to very hot.  Wipe a piece of oiled kitchen oil around the inside of the pan and then holding it at an angle, slowly pour a trickle of batter into the pan, twiddling it as you go to coat the entire base of the saucepan.  Stop pouring soon enough to ensure a thin covering - don't make them thick and stodgy!
3. Once the batter has set, shake it loose from the bottom of the pan and keep it over the heat long enough to turn a light golden brown colour.  Flip the pancake and cook the other side to your liking.
4. Tip onto a plate.  Drizzle with lemon juice and sprinkle with sugar.  Roll the pancake up and drizzle with more lemon juice and sugar.  Eat whilst hot!
