Pasta and Sundried Tomatoes

Simple and tasty.
Serves 6.
75 g sundried tomatoes, soaked in warm water
small onion, chopped
500 g pasta, boiled and drained
2 crushed garlic cloves
olive oil
creme fraiche
grated cheese (optional)
1. Fry the onion in the oil.  Add the chopped tomatoes and garlic,  Fry about 4 mins.  Put pasta in a dish and add the tomato mixture.  Mix up.
2. Pour some of the tomato soaking water into the frying pan.  Add the creme fraiche and mix.  Add more garlic if you like withe salt and pepper to taste.  Warm gently until the creme fraiche has melted and then add the grated cheese if using.  Mix in and pour over the pasta.  Sprinkle grated parmesan over the top and heat in the oven or under the grill.
