Smoked Salmon & Avocado Terrines

  • Currently 4/5
Beautiful and delicious starter, easy but looks complicated.  BBC Good Food again.
Serves 8.
450 g sliced smoked salmon
100 g goat cheese, broken into small pieces
3 tbsp snipped chives
3 large ripe avocados
3 tbsp lemon juice
sweet chilli sauce
salad leaves
1. Lightly oil 8 ramekin dishes.  Line with cling film (making sure there is plenty of overhang) and then the salmon, also with overhang.
2. Gently mix together the cheese, chives and avocado with the lemon juice and plenty of seasoning.  Spoon in to the salmon-lined ramekins, press down and seal shut with the salmon over-hang and then the cling film.  Chill at least 4 hours.
3. Lift the terrines out of the ramekins using the clingfilm.  Place the other way up on plates garnished with leaves and vinaigrette.  Drizzle the terrines with sweet chili sauce.
