Spicy Burgers

Serves 6-8
1 tsp coriander seeds
1 tsp cumin seeds
1 small onion, quartered
400 g minced beef
400 g minced lamb
2 large garlic cloves
4 tbsp chopped fresh herbs (coriander, mint, parsely)
2 tbsp olive oil
8-9 pitta breads
chopped lettuce, lemon wedges, red onion rings and houmous to serve
1. Grind spices in a pestle and mortar.  Mince the onion in a processor and add the spices, meat, garlic and herbs and season.  Blend to a smooth paste.  Leave for 30 minutes.
2. With wet hands, roll the mixture into balls.  Press down onto each ball with the heel of your hand to make burgers.  Brush lightly with oil and fry, grill or barbecue approx 3 minutes on each side until well browned and cooked through.
3. Toast or grill the pittas and keep warm on a plate covered with a tea towel to prevent them going hard.  Split and fill with burger(s) and topping to taste
