Velvet Chocolate Torte

This recipe is from my mum and I've never actually made it myself - haven't needed to!
12 Hobnobs
59 g butter
2 egg whites
85 g caster sugar
250 g plain chocolate
285 ml double cream
2 tbsp brandy
1. Crush the biscuits, stir in the melted butter and pack into a 20 cm / 8 inch tin.  Leave to cool.
2. Put the sugar and egg whites into a bain marie and beat for 5 minutes until the meringue stands in soft peaks.
3. Melt the chocolate in the microwave.  Whip the cream until it holds its shape.
4. Fold the chocolate into the egg whites, followed by the cream and the brandy.  Pour into the tin and smooth it over.  Cover and leave in the fridge overnight.
