Vegan Hoppin' John

Spicy blackeyed peas with tomatoes and chilis - eat this on New Year's Day for good luck all year! Perfect with basmati rice and country greens.
Ingredients
2 cans Black-Eyed Peas, drained and rinsed
2 cans Diced Tomatoes with Green Chilies
1 medium Red onion
1 clove garlic, minced
1 tsp Cajun Seasoning or Chili Powder
1 1/2 tbsp Olive Oil
 
Directions
1. In large pot, heat olive oil over medium-high heat. Add onion and cook until softened, about 4 minutes. Add garlic, tomatoes, and seasoning. Stir to combine.
2. Add black-eyed peas, water, and stir to combine. Reduce heat to medium or medium-low, and simmer until sauce has reduced to a thick consistency, about 10 minutes.
3. Add salt and pepper to taste (optional).
 
Notes:
Serve over basmati rice with a side of sauteed country greens. Makes approximately 4-6 servings.
