Sponge Sheet Cake

Ingredients
75 g Cake Flour
Pinch Salt
4 Large Eggs, separated (at room temp.)
1 Large Egg Yolk (at room temp.)
155 g granulated sugar
1/2 tsp Vanilla Extract
 
Directions
1. preheat oven to 350°.P
2. grease baking sheet, then line with parchment paper, grease parchment, flour parchment and finally dump excess flour.G
3. Sift together dry ingredients, set aside.

4. Beat egg yolks and half the sugar, for about 3 minutes, until it thickens a little and ribbons back on itself.
5. Add vanilla to the egg yolks and beat again until combined.
6. Clean the beaters well, get a clean bowl while you are at it.
7. Beat egg whites on medium for ~1 minute, until foamy. Increase the speed and beat on medium/high for ~2-3 minutes, until soft peaks form. Reduce speed to medium and slowly add in the remaining 1/2 cup of sugar. Once it is all added beat for ~1 minute more. You should now have stiff peaks
8. Fold egg whites into the egg yolks, until just combined
9. Fold in dry ingredients in 4 separate additions, each time until combined
10. Spread batter out on your prepared baking sheet. smooth surface with spatula (doesn't have to be perfect.)
11. Bake the cake for 12 minutes undisturbed. If the cake looks light brown, check for firmness. If it is firm insert a toothpick, if it comes out wet, bake for another 2 minutes. Repeat until toothpick comes out clean.
