Perfect Cornbread

This is for the "northern" variety - the cake-like savory bread - rather than the baked pudding "southern" variety.
1 cup flour
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
1 cup cornmeal
2 eggs
1 cup milk
1/4 cup shortening or vegetable oil
1. Preheat oven to 425 degrees.
2. Mix flour with sugar, baking powder, salt and cornmeal.
3. Add eggs, milk and shortening or oil. Beat till just smooth, about one minute (do not overbeat).
4. Pour into greased 9x9x2-inch pan.
5. Bake for 20 to 25 minutes, or until toothpick inserted in center comes out clean.
This recipe comes form an old copy of the Better Homes and Gardens red plaid cookbook - from before they went all no-salt and low-fat.

This recipe is the basis for Cornbread Dressing.
