Cheesy Hash Browns

Mom got this recipe from the Women of the Legion Auxiliary - they called it "Dairy Potato Bake" but we've come to know it as "Cheesy Hash Browns" and make it for Thanksgiving, Christmas, Easter, etc.
2 bags Simply Potatoes hashbrowns
1/4 cup melted butter
1 can Cream of Chicken soup
12 oz sour cream
2-3 cups shredded cheddar cheese
1 tsp salt
dash pepper
1 cup crushed Corn Flakes
1. Mix above ingredients well.  Pour mixture into a 9x13 pan.
2. Top with about one cup of crushed corn flake crumbs.
3. Sprinkle a bit of cheese over the top of the corn flake crumbs.
4. Bake at 350*F for one hour.
They seem more flavorful if the potatoes sit out for a few minutes before serving.

Be careful not to pack the hashbrowns too tightly!
