Deep Fried Tuna Stuffed Shells

Yields 8 servings
16 jumbo uncooked pasta shells
2 eggs, divided
1 can tuna, drained
1 cup shredded cheddar cheese
1 medium tomato, peeled, seeded, and chopped
2 tbsp sliced green onion
1/2 tsp dried basil
1/8 tsp black pepper
1 tbsp water
1 cup breadcrumbs
vegetable oil
tartar sauce
1. Add shells gradually to 6 quarts boiling salted water and cook until tender. Drain, rinse under cold water, and drain again.
2. Set aside to cool.
3. Slightly beat 1 egg, combine with tuna, cheese, tomato, green onion, basil, and pepper in medium sized bowl.
4. Stuff cooked shells with tuna mixture.
5. Beat remaining egg with water in small bowl. Dip each shell in mixture.
6. Roll each shell in breadcrumbs.
7. Heat oil in large saucepan until temp is 365 degrees.
8. Fry the shells 1 1/2 to 2 minutes until they are golden brown.
9. Drain on paper towels.
10. Serve with tartar sauce.
