Chocolate Mint Glacier Cookies

1 1/2 cups (180 g) all-purpose flour
2/3 cup (57 g) cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick, 113 g) unsalted butter
3/4 cup (148 g) sugar
1/2 cup (106 g) brown sugar
3 eggs
1/2 teaspoon peppermint or mint extract
1 1/2 cup powdered sugar - sifted
1. Preheat oven to 350°F/175C.
2. In a large bowl, whisk together flour, cocoa powder, baking powder, and salt until combined.
3. Using a hand mixer, cream together both sugars and butter for 1 minute. Add and incorporate one egg at a time into the mixture then add peppermint.
4. Turn hand mixer on low and slowly add in the flour mixture until a sticky dough is formed.
5. Chill in freezer for 10 minutes.
6. Sift powdered sugar into a bowl and add a heaping teaspoon sized ball of dough, rolling to lightly coat in sugar so you are able to roll it between your palms without sticking. Once you have rolled it into a ball, roll back through the powdered sugar to coat more heavily.
7. Line a baking sheet with parchment paper and place 12 coated dough balls on each.
8. Cook, one sheet at a time, for 11 minutes.
9. Cool for 5 minutes before transferring to a wire rack to cool completely.
