Morning Glory Muffins

Makes 3+ dozen muffins.
Ingredients
Dry Ingredients
4 cups all-purpose flour
1 teaspoon salt
2 teaspoons cinnamon
4 teaspoons baking soda
Add-Ins
1 cup shredded coconut
1 cup raisins
2 cups finely grated carrots*
2 1/2 cups grated apples (with peel on)*
1 cup pecans (optional)
Wet Ingredients
6 eggs
1 1/2 cups sugar
1 cup vegetable oil
1 cup applesauce
4 teaspoons vanilla extract
 
Directions
1. Sift dry ingredients into a large bowl.
2. Add add-ins to dry ingredients, then blend all together.
3. Beat wet ingredients well in a separate bowl.
4. Stir wet ingredients into flour and fruit mixture just until moistened. Do NOT overmix.
5. Spoon into lined muffin pans--3/4 full. Bake at 325°F for 25-30 minutes. Freezes well.
 
Notes:
*Ratio of carrots and apples is flexible. Recommend that at least 1 c. of apples is used. If using 3+ c. apples, recommend using 2 apple varieties (i.e. Granny Smith and Red Delicious).
