4 1/2 cups all purpose flour
3 eggs
1.76 oz soft butter
1.69 fl. oz white wine
2 tablespoons milk (maraschino, rum, or grappa) or lemon zest
1 pinch salt
milk (if necessary)
2 teaspoons baking powder (optional)
vegetable oil for frying
icing sugar to sprinkle
1. Mix flour with other ingredients, knead well and then add milk little by little if necessary, knead again to form a smooth dough. Wrap the dough in film let it rest in the fridge for 30 minutes. Cut the dough into pieces and roll them through the pasta machine (or use a rolling pin) to about 1/10 inch thick. Cut it into 1.5 x 4.5 inches rectangles using a pastry cutting wheel, fold the strip into the center and press. Fry the chiacchiere on both sides, a few at a time, in a large pot of hot vegetable oil, remove them from the oil when they are golden brown and place them on paper towels to drain. Sprinkle with icing sugar and serve.
