Green Pilaf with Cashews

This is a great side dish to grilled tempeh or marinated tofu, but because it has so many different tastes, it works wonderfully as a one-dish meal as well.
4 cups spinach
6 green onions
2/3 cup cashews, roughly chopped
2 tablespoons olive oil
2 cloves garlic
1 teaspoon fennel seeds
1 1/2 cups long grain brown rice
2 tablespoons lemon juice
2 1/2 cups vegetable stock
3 tablespoons chopped parsley
1. Heat onion in pan and cook over medium heat for 2 minutes. Add garlic and fennel seeds. Cook for 1 minute. Stir in rice, mixing well to combine and increase heat to high, add lemon juice and vegetable stock and bring to a boil.
2. Once boiling, reduce heat to low, cover, and cook for 45 minutes.
3. Remove from heat, sprinkle with spinach and herbs. Stand, covered, for 8 minutes, then mix. Sprinkle with cashews and Serve.
