BBQ Chicken Pizza

BBQ Chicken breast pizza topped with cilantro and gouda.
2 Boneless Skinless Chicken Breast
1/2 cup BBQ sauce (hickory is best)
1/2 red onion, sliced thin
1/4 cup chopped cilantro
1 tbsp honey
1/3 cup brown sugar
1 1/2 cups smoked gouda cheese, shredded
1 12 inch prebaked pizza crust
1. Cube chicken and set in a bowl to the side. Add a bit of Evoo to a skillet and put brown sugar, bbq sauce and honey in to boil.

2. Once boiling reduce heat and add chicken to mixture. Lid and cook at a slow boil until chicken is almost done, then remove the lid to cook the chicken the rest of the way until no longer pink or internal temp is 160*.

3. Once chicken is done, remove from heat and let sit for 5-10 minutes to thicken while preheating your oven to 450*

4. Add BBQ topping to pizza.

5. Top with onions and cilantro. Add shredded cheese evenly and bake at 450* until onions are done and cheese begins to brown evenly.
