Broiled Chicken Breast with Vegetables

Potatoes, carrots, zucchini and onions steamed and then broiled with chicken breasts.
2 Boneless, skinless chicken breasts
1 cup baby carrots
1 cup thin sliced zucchini
1/2 onion, sliced thin
2 white potatoes, cut into one inch squares
1/2 bottle italian salad dressing
salt and pepper to taste
1. Add carrots, zucchini, onion and potatoes to steamer and steam until carrots are done but potatoes are still a bit crispy.

2. Add all vegetables to a small square baking dish, layering the veggies on bottom, then the chicken breasts side by side, hten more veggies on top.

3. Squirt half a bottle of italian salad dressing onto the top of the mix, stirring gently so it falls into the bottom layers.

4. Salt and pepper to taste.

5. Broil until outside of chicken becomes white on top and bottome. Then turn oven on to 500 degress and cook until chicken runs clear or is 160*
