From “Jamie’s Ministry of Food” by Jamie Oliver

INGREDIENTS

1-3/4 lbs leeks, outer leaves peeled off, ends trimmed

2 cloves garlic, finely sliced

2 knobs butter

6 sprigs thyme, leaves removed from stalks and reserved

3/4 cup cheddar, grated

salt and pepper, to taste

3/4 cup table cream

DIRECTIONS

1. Quarter leeks lenghtwise and roughly chop. Put into a sieve and rinse well.

2. Melt butter with oil and saute garlic. When garlic just begins to colour, add leeks and thyme. Turn up heat and cook 10 mins or until softened.

3. remove leeks from pan and season. Add cream and half grated cheese. Mix and transfer to a ceramic baking dish. Sprinkle with rest of cheese and bake at 400F for 20 mins until golden and bubbly.

* Makes 4-6 servings
