from Primal Blueprint Cookbook Serves: 4

INGREDIENTS

2 lbs fish (Cod, Mahi Mahi, and all Halibut all work well)

2 tbsp lemon pepper seasoning

olive oil, for drizzling

white or red onion, thinly slided

lettuce leaves to wrap fish in, and/or thinly sliced cabbage to serve on the side

avocados, sliced for garnish

DRESSING:

1 cup mayo

3 large or 4 small limes (for the zest and juice)

2 cloves garlic, finely chopped

DIRECTIONS

1. Season the fish with lemon pepper and drizzle olive oil on top. The fish can either be pan-fried, broiled or grilled. and should only take about 4 minutes per side to cook.

2. While the fish is cooking, use a grater to remove the green peel from the limes and make zest. Cut the limes open ad squeeze out the juice. Stir together the mayo, garlic, and lime zest. Slowly add the lime juice until the flavor and consistency of the dressing are to your taste.

3. Drizzle the dressing over the fish, lettuce leaves and/or cabbage and garnish with sliced onion.
